Beans with chorizo - a spicy Mexican dish

INGREDIENTS - Beans
12oz dried pinto or borlotti beans
Small onion
1 clove garlic
Red chilli powder
1 bay leaf

INGREDIENTS - Main Dish
8oz good quality chorizo sausage
6oz good quality mature cheddar cheese

PREPARATION - Beans
Soak the beans in water for at least 5 hours. Peel and chop the onion and garlic.

METHOD - Beans
Drain the beans, place in pan with onion, garlic, chilli powder and bay, and cover with fresh water. Bring to boil and simmer for 1 hour or until soft, stirring occasionally. Add a little water if necessary to keep the beans submerged.

PREPARATION - Main Dish
Peel the chorizo and cut into chunks. Grate cheese.

METHOD - Main Dish
Add a litle oil to a pan and fry the chorizo gently for 5 minutes. Add the beans and any liquid to the pan, raise heat to high and, stirring continuously, evaporate most of the liquid. Place the mixture in a dish, cover with cheese and grill until bubbling. Serve with freshly made Guacamole (see below) and Tortilla Chips.


Guacamole

INGREDIENTS
2 ripe avacodos
2 medium tomatoes, chopped
4 spring onions, chopped
handful coriander leaves, chopped
1 green chilli, seeds removed and chopped
Juice of 1 lime
Salt
Freshly ground black pepper

METHOD
Mash the avacado flesh with a fork and mix in the other ingredients.
